We present an easy interpretation of a beverage found on our latest cocktail list. It's a batch prepared mix which is packed full of essence of a festive period, which makes it ideal for hosting a festive gathering. Any leftover cordial to use in breakfast cocktails, puddings, or to mix more rounds of the drink.

The Bikini Cocktail

Yields 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Place every ingredients inside a pan, bring to a gentle boil, mixing until the sugar dissolves. Then, remove from the stove and leave to cool fully. Transfer to a sealable bottle, seal keeping it chilled, it will last for around a month.

For the Batch Mix: Combine all the spirits and syrup into a big jug, allow it to infuse for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

To serve: Add 85ml from the cocktail base to a stirring glass filled with ice, and stir gently for one minute until cold. Filter to a cold coupe glass or similar, top with a few cranberries and finish with a quick spritz with the mandarin essence over the top.
